Job Purpose

The Food & Beverage Controller is responsible for monitoring, controlling, and reporting on all food and beverage costs to ensure profitability, minimize wastage, and maintain effective inventory controls. The role works closely with the Finance, Purchasing, Stores, Kitchen, and Food & Beverage teams to ensure efficient cost management and compliance with established procedures.

Key Responsibilities

  • Monitor daily food and beverage costs and prepare regular cost analysis reports.
  • Conduct stock counts and inventory reconciliations for food, beverages, and operating supplies.
  • Verify purchase orders, goods received notes, supplier invoices, and stock issues.
  • Monitor portion control, recipe costing, and menu pricing to support profitability.
  • Analyse variances in food and beverage consumption and recommend corrective actions.
  • Ensure compliance with stock control procedures and internal financial controls.
  • Work closely with chefs and restaurant managers to reduce wastage and improve cost efficiency.
  • Review daily sales reports and reconcile inventory movements.
  • Prepare monthly food and beverage cost reports for management.
  • Support budgeting, forecasting, and financial planning activities.
  • Participate in internal and external audits as required.
  • Ensure compliance with company policies, food safety regulations, and financial reporting standards.

Qualifications

  • Bachelor's Degree or Diploma in Accounting, Finance, Hospitality Management, or a related field.
  • Professional accounting qualifications (CPA Part II or above) will be an added advantage.

Experience

  • Minimum of 3–5 years' experience in a similar Food & Beverage Controller position within a reputable hotel or resort.
  • Strong experience in inventory management, cost control, and hotel financial reporting is required.

Skills and Competencies

  • Strong analytical and financial management skills.
  • Excellent knowledge of food and beverage costing.
  • Proficiency in Microsoft Excel, accounting software, and hotel management systems.
  • Strong inventory management and reconciliation skills.
  • Excellent attention to detail and accuracy.
  • Effective communication and interpersonal skills.
  • High integrity and ability to work with confidential financial information.
  • Strong problem-solving and decision-making abilities.

Key Performance Indicators (KPIs)

  • Food cost percentage.
  • Beverage cost percentage.
  • Inventory accuracy.
  • Reduction in stock losses and wastage.
  • Timeliness and accuracy of financial reports.
  • Compliance with internal controls and audit requirements.
  • Gross profit margins for food and beverage operations.
  • At least 3-5 years experience in a similar position in a Hotel or Resort
