A reputable company dealing in fruit pulps, concentrates, juices, and water is setting up a modern fruit dehydration plant for the European export market. We seek a competent Production Manager to oversee production, ensure efficiency, and maintain top-quality food-safety standards.

Job Purpose

To manage and coordinate all fruit dehydration production activities, ensuring efficiency, high-quality output, food-safety compliance, and achievement of production targets while optimizing raw materials, equipment, and manpower.

Key Responsibilities

Production Planning & Operations

  • Prepare and execute production schedules.
  • Oversee all dehydration stages: sorting, washing, slicing, drying, moisture testing, conditioning, packaging.
  • Maintain continuous production flow with minimal downtime.
  • Monitor yields, efficiency, wastage, and drive performance improvements.
  • Ensure optimal equipment usage (dryers, slicers, conveyors, calibrators).

Quality Assurance & Food Safety

  • Maintain strict adherence to HACCP, FSMS, GMPs, hygiene, and export requirements.
  • Work with QA team to enforce quality checks at every stage.
  • Monitor moisture content, colour, texture, and microbial limits.
  • Act immediately on quality deviations to prevent waste or rejections.

Leadership & Resource Management

  • Lead and supervise production teams.
  • Ensure efficient use of mangoes, pineapples, coconuts, and other raw materials.
  • Enforce waste management and accurate product traceability.

Maintenance & Safety

  • Ensure all machines function optimally and plan preventive maintenance.
  • Promote compliance with environmental, health, and safety regulations.

Reporting

  • Prepare daily, weekly, and monthly reports for management.

Qualifications & Experience

  • Bachelor’s Degree in Food Science, Food Technology, or related field.
  • 5 years’ experience in food processing, including 3 years in fruit dehydration or fruit-processing.
  • Knowledge of HACCP, GMP, FSMS/ISO22000.
  • Strong technical knowledge of dehydration equipment.
  • Proven team leadership experience.
