Background

The Severin Sea Lodge is located at Bamburi Beach directly at the Indian Ocean and affectionately built in a traditional African style.

Role Context

In this role you cook to a consistent luxury standard: mise en place is ready, dishes are right, and service stays calm. You work as part of the kitchen team under the Head Chef. This is a live-in role with rotational leave.

Responsibilities

• Prepare and cook dishes to a consistent luxury standard.
• Cover hot kitchen / entremetier work: soups, vegetables, eggs, sides, and vegetarian plates.
• Keep mise en place, timing, and presentation tight for breakfast, lunch, and dinner.
• Honour dietary needs and special requests as briefed.
• Follow food safety, hygiene, and portion-control standards.
• Support other kitchen stations and bush dining when required.
• Keep your section clean, organised, and ready for the next service.
• Protect stock, equipment, and a professional kitchen atmosphere.

Qualifications and Requirements

• At least 2 years as a cook in a 4-star or 5-star hotel, lodge, or safari camp.
• Accurate, hygienic work under service pressure.
• Fluent English, spoken and written.
• Willing to live in at camp, work rotating kitchen shifts (including early mornings, evenings, weekends, and public holidays), and follow a rotational leave pattern.
• Calm, team-first, and reliable on standards and integrity.
