In this role you lead restaurant and bar service so every meal feels calm, precise, and warm. You run the floor — not the kitchen — coach the service team, and keep dining aligned with the rest of the guest stay. This is a live-in role with rotational leave.
Tasks
- Lead daily restaurant and bar service to a consistent luxury standard.
- Brief, coach, and support waiters and bartenders on shift; step in on the floor when needed.
- Keep mise en place, presentation, and timing tight before and during service.
- Coordinate with kitchen and other departments so meals, diets, and special requests are delivered as briefed.
- Handle guest requests and complaints quickly, professionally, and with follow-through.
- Support bush dining and special F&B moments when they are part of the guest programme.
- Ensure accurate posting, billing, and end-of-shift reporting.
- Protect stock, standards, and a professional guest-facing atmosphere.
Requirements
- At least 3 years in F&B service in a 4-star or 5-star hotel, lodge, or safari camp, including at least 1 year supervising waiters and/or bartenders.
- Proven ability to run a full restaurant or bar shift.
- Strong food and beverage service skills, including wine and bar service.
- Fluent English, spoken and written.
- Willing to live in at camp, work rotating shifts (including weekends and public holidays), and follow a rotational leave pattern.
- Calm under pressure, guest-first, and reliable on standards and integrity.
- Nice to have: safari camp or luxury lodge experience; diploma in hospitality.
