DUTIES AND RESPONSIBILITIES

Cost Control & Financial Management

  • Monitor daily food and beverage costs against budgets and forecasts
  • Analyze variances between actual and standard costs
  • Prepare regular cost control and performance reports
  • Recommend strategies to reduce wastage and improve profitability

Inventory Management

  • Oversee stock levels for all food, beverage, and consumable items
  • Conduct regular stock counts and reconciliation with system records
  • Monitor stock movement, usage trends, and expiry risks
  • Ensure proper storage practices to minimize losses

Purchasing & Verification

  • Verify purchase orders, supplier invoices, and delivery notes
  • Ensure correct pricing, quantities, and quality standards are met
  • Liaise with suppliers and procurement teams to resolve discrepancies
  • Support approval processes for F&B purchases

Reporting & Compliance

  • Maintain accurate records of all F&B transactions
  • Prepare weekly, monthly, and ad-hoc financial reports
  • Ensure compliance with hotel financial policies and procedures
  • Support internal and external audits

Systems & Process Management

  • Utilize POS/ERP systems to track sales, inventory, and cost data
  • Ensure proper system entries for all F&B transactions
  • Support system improvements and data accuracy checks

KEY REQUIREMENT SKILLS AND QUALIFICATION

  • Degree in Hospitality Management, Finance, Accounting, or related field
  • CPA certification is an added advantage
  • Minimum 2+ years of experience in F&B cost control or hospitality finance
  • Strong understanding of hotel operations and F&B systems
  • Experience with ERP and/or POS systems (advantageous)
  • Strong Excel and reporting skills
  • Knowledge of inventory management and cost control principles
