About the Role:
We are seeking a seasoned, highly skilled Head Chef to lead our kitchen operations and culinary team. The Head Chef will oversee all aspects of kitchen management, supervise chefs and kitchen staff, and act as the accountability officer for stock management, SOP compliance, and food quality.
Key Responsibilities
1. Kitchen Leadership & Staff Management
- Lead, supervise, and mentor all kitchen staff, including chefs and support staff;
- Maintain discipline, high performance, and morale in the kitchen;
- Conduct staff coaching, training, and professional development;
- Assign tasks and monitor team efficiency and productivity.
2. Operational Accountability
- Act as accountability officer for kitchen operations and stock management;
- Ensure timely provision of ingredients and continuous availability of raw materials;
- Plan and organize kitchen workflow for maximum efficiency;
- Maintain records of catering equipment, materials, and supplies;
- Provide specifications for procurement of catering equipment and materials.
3. Food Quality & Standards
- Set standards and targets for production of high-quality food;
- Ensure correct portion sizes and minimize wastage;
- Oversee proper cleaning and maintenance of equipment to prevent contamination;
- Monitor and enforce adherence to SOPs, food hygiene, and safety regulations;
- Develop innovative menus that align with company vision and customer expectations.
4. Operational Coordination & Reporting
- Liaise with other departments on catering requirements;
- Advise on student internships and attachments;
- Prepare periodic operational and performance reports;
- Undertake additional duties consistent with the level of responsibility.
Minimum Requirements
- Minimum 10 years' experience as a chef, with at least 3 years as Head Chef;
- Seasonal/professional candidate with proven track record in high-volume kitchens;
- Valid Food Handlers Certificate;
- Diploma or a Degree in: Catering Management, Food Preparation & Cooking, Food Service & Sales, Food Production or other relevant equivalent qualification;
- Professional Chef Course is an added advantage;
- Strong leadership, organizational, and accountability skills;
- Excellent knowledge of culinary trends, menu development, and kitchen management.
