CHEF DE PARTIE

Job Purpose

The Chef de Partie is responsible for managing an assigned kitchen section and ensuring the consistent preparation and presentation of high-quality dishes in accordance with established recipes, standards, and food safety requirements.

Key Responsibilities

  • Take responsibility for the day-to-day operation of an assigned kitchen section.
  • Prepare and cook dishes according to established recipes, specifications, and presentation standards.
  • Ensure consistent quality, flavour, portion size, and presentation.
  • Prepare ingredients through chopping, portioning, marinating, seasoning, and other required processes.
  • Organise and maintain the section before, during, and after service.
  • Coordinate effectively with other kitchen sections and the service team.
  • Monitor food preparation and cooking times to ensure timely service.
  • Check the quality and freshness of ingredients before use.
  • Minimise food waste through appropriate preparation, storage, and portion control.
  • Maintain appropriate stock levels within the assigned section.
  • Follow food safety, hygiene, sanitation, and HACCP procedures.
  • Maintain kitchen equipment and report faults promptly.
  • Assist with menu preparation, specials, and new dish development where required.
  • Support and guide Commis Chefs and junior kitchen staff.
  • Maintain a clean, organised, and safe working environment.
  • Perform other culinary duties assigned by the Sous Chef or Executive Chef.

Requirements

  • Relevant culinary qualification is preferred.
  • Minimum 3 years' relevant culinary experience, preferably in a 4- or 5-star hotel or high-end restaurant.
  • Strong knowledge of professional kitchen operations.
  • Good understanding of food safety and hygiene standards.
  • Excellent knife skills and cooking techniques.
  • Ability to work under pressure during busy service periods.
  • Strong teamwork, organisation, and communication skills.
